Frozen Banana Pops

Does anything go better together than peanut butter & chocolate? How about banana and peanut butter? Better yet, how about peanut butter, banana, chocolate, and coconut all rolled into one little bite-size treat?

Well, that’s just what these Frozen Banana Pops are.

There are fewer foods I love more than peanut butter, and I am team creamy versus crunchy.

Sometimes I will just schmear some peanut butter on sliced banana for a healthy snack or breakfast. However, when I am feeling decadent, pb + chocolate is the way to go.

So when I came up with this recipe it was literally eureka moment ~ banana, peanut butter annnnnd chocolate!

You can sub almond or sunflower seed butter for peanut butter

Recipe rundown… 

For this quick and easy recipe you’ll only need four ingredients. Yes, only four.

  • banana, you’ll want ripe but firm
  • peanut butter, or your favorite nut or seed butter
  • dark chocolate, high-quality is best here
  • coconut, or other add-in option below

This is a great project to get the kids in the kitchen!

A few ingredient tips, if I may…

For the peanut butter try to find one that is free of added oils, sugar, etc. I like my nut or seed butters to be roasted with maybe only a little salt added. My go-to brand is either Santa Cruz or Whole Foods organic creamy peanut butter.

When using chocolate in recipes my philosophy is this: the better your chocolate, the better the end result. Try to find dark chocolate that is at least 70% cacao content, and does not have oils, dairy or lecithin added. None of these are needed in good chocolate!

For dark chocolate my favorite one for eating out of hand or in recipes is Theo 70% dark chocolate. Occasionally I will use Hu or Eating Evolved, both of which are also super high-quality.

Both of the peanut butter and chocolate brands I like are available at Whole Foods.

With the coconut in this recipe, you can lightly toast it first for best flavor. Bake at about 300 or 325° until lightly golden, being careful not to burn.

Or you can even just do simple melted chocolate, then top these with flaky salt or rainbow sprinkles.

The technique… 

Once you have your ingredients it’s a quick snack-slash-healthy dessert to throw together. It’s even a great recipe to get the kiddos involved!

You just slice, dollop, dip and serve. With a little freezer time in between. So it’s simple to make and makes for easy clean up.

  • slice ripe but firm bananas about 1” thick
  • top with a dollop of peanut butter, then freeze to firm
  • melt chocolate, mix in coconut
  • dip banana-&-pb into chocolate, freeze again to set

 

You can store these pops in the freezer for a cold treat, or bring to room temp first

I like my Pops almost room temperature, but they can be enjoyed straight from the freezer for a cold treat (especially in the summer).

  1. peel banana and slice into 8 "coins”, about 1-inch thick
  2. top each banana slice with 1/2 teaspoon of nut or seed butter of choice (peanut, almond, cashew or sunflower seed); place on a parchment paper lined plate and freeze 30-45 minute to firm
  3. melt dark chocolate in a double boiler, or in the microwave in 30-second increments (about 90 seconds if doing in the microwave), then stir in coconut or other add-in
  4. remove bananas from freezer; using two forks, carefully dip each piece into melted chocolate and return to plate, freeze 10-15 minutes more to set chocolate
  5. Banana Pops can be enjoyed straight from the freezer, or bring them to room temp for a tasty treat
