Crispy Almond Butter Cups

What goes better with almond butter than chocolate? Correct answer: not much! So these Crispy Almond Butter Cups are now my new favorite healthy dessert.

If you are a fan of Reese’s peanut butter cups (or other store-bought chocolate nut butter cups), you will love these Crispy Almond Butter Cups. They are chocolatey, a little creamy and a little crispy. Bonus ~ it’s an easy three-step recipe to make, and you can even get the kiddos to help.

Let’s get down with the recipe… 

For this recipe you’ll need a few pantry staples, most of which you likely already have on hand.

  • dark chocolate
  • almond butter
  • cocoa rice crisps
  • hemp seeds
  • almonds

For the chocolate here I went with my favorite bar, Theo dark chocolate with coconut. I like to enjoy a square are two after dinner, and I also use it in desserts like this. You can find Theo at most supermarkets.

The almond butter I like for this and even for toast is Once Again creamy roasted. Sub peanut butter or sunflower seed butter if preferred, and whenever you buy a nut or seed butter look for one with as few ingredients as possible. Just 100% roasted nuts/seeds is the best way to go, maybe with a little salt.

You can sub sesame seeds for the hemp seeds

For the rice crisps I like the organic Nature’s Path cocoa crisps. They’re a great addition to desserts, energy bars, yogurt, granola, and more. You should be able to find this at most health food stores.

Lastly, for extra crunch and some plant-y protein, I add in hemp seeds and roasted almonds on top. You can sub chia or sesame seeds if you don’t have hemp seeds.

My top tips for baking or cooking with chocolate…

When it comes to working with chocolate I have one general rule of thumb. Only bake/cook with chocolate you would eat out of hand. What do I mean by this?

Seek out high-quality dark chocolate that would taste just as good as if you were eating a square (or three!). i.e. I don’t buy “baking chocolate”. I don’t even get bittersweet.

I like to use my favorite dark chocolate bars or chips in recipes.

Once you have the ingredients ready it’s time to rock and roll. And the recipe could not be easier! The hardest part is waiting for the almond butter cups to firm up in the freezer.

Here’s how to make these Crispy Almond Butter Cups:

  • melt the chocolate, then fill paper cups with half of melted chocolate
  • freeze about 15 minutes to set bottom layer
  • top bottom layer with almond butter, freeze another 15 minutes to set
  • add remaining melted chocolate, then toppings, then freeze 15 minutes to set
  • bliss out at the deliciousness!

I like to enjoy these treats at room temperature, so once the layers are set I store in an airtight container on the counter. But you can store them in the fridge if you prefer.

  1. melt chocolate in either a double boiler or in the microwave in 30-second increments until melted
  2. fill four standard OR eight mini cup liners with HALF of melted chocolate, disturbing it equally among the cups, then freeze 15 minutes to set
  3. divide the almond butter equally among cups, (you can add a little more than recipe indicates if needed/desired, just don’t overfill!); then return to freezer 15 minutes to set almond butter layer
  4. re-melt remaining chocolate a little if needed at this point, then fill cups with the remaining chocolate; divide rice crisps, almonds and hemp seeds evenly on top of cups, then freeze one last time to set, about 15 minutes
  5. enjoy Crispy Almond Butter Cups at room temp, or keep in the fridge for a cold treat
