Frozen Almond Joy Bites

Frozen Almond Joy Bites are the perfect summertime treat. And, bonus, they are healthy and super easy to make.

The hardest part is resisting how addictive they are!

If you are a fan of Mounds or Almond Joy bars, you will love these Frozen Almond Joy Bites. They are made with coconut, toasted almonds and dark chocolate. And of course this recipe is way healthier than the store bought stuff.

You’ll need just a few ingredients and only a few minutes in the kitchen to make these tasty treats.

Let’s get down to recipe business!

For Frozen Almond Joy Bites you will need:

  • Emmy’s coconut cookies (more on that in a sec)
  • dark chocolate
  • whole almonds

This easy recipe has only three ingredients

Yes, that is it, just three ingredients!

The “cookies” I used as the base for this recipe are Emmy’s Organics coconut cookies, which come in various flavors. I use quotes with cookies because they are aren’t what comes to mind when you think of a traditional cookie. They are soft and very coconut-y like a macaroon, and are also vegan and gluten-free.

For this recipe I use the vanilla flavored ones. But you can use chocolate, peanut butter or any other flavor you like.

You can find Emmy’s at Whole Foods and Amazon and on the Emmy’s Organics website, so check there.

My go-to dark chocolate is Theo 70%, for recipes and enjoying out of hand.

When buying dark chocolate, whether for enjoying on its own or using in recipes, always look for the highest quality dark chocolate with minimal ingredients. Avoid chocolate with soy or dairy, and for the antioxidant health benefits go with with 70% cacao content or higher.

The recipe calls for whole almonds versus sliced or slivered because you get the true Almond Joy flavor going on.

I recommend buying whole raw almonds and roasting yourself. Just bake at 350° for 10 minutes until nutty.

TIP: always roast nuts and seeds to bring out the flavor, makes a world of difference!

How to make Frozen Almond Joy Bites…

This recipe is literally as easy as 1-2-3!

First, melt your chocolate. You can easily melt in the microwave if preferred, just do so in 30-second increments until melted enough for dipping (about 60 – 90 seconds total). Alternatively, melt in a double boiler.

Second, top each Emmy’s cookie with the toasted almond, then gently dip each cookie in melted chocolate using two forks. Alternatively, place cookies on a parchment-lined plate and drizzle chocolate over each cookie to coat.

The third and final step, pop the Almond Joy Bites in the freezer until set or until frozen. It takes about 15 minutes to set, longer if you want them frozen.

By the way, the “frozen” part is optional. You can of course enjoy these at room temp, depending on your preference.

Enjoy these treats straight from the freezer or let them get to room temp first. It’s really just a matter of preference (and how long you want to wait!). Either way, I hope you love this recipe as much as I do.
