Mango, Avocado & Butter Lettuce Salad

I’m toasting to this new recipe for Champagne Mango, Avocado & Butter Lettuce Salad with Citrus-Poppyseed Dressing.

This quick and easy recipe is made with tender butter lettuce, fresh champagne mango, avocado, toasted almonds and a citrus-poppyseed dressing. 

It’s super-healthy, very low in oil, and is the perfect salad to serve at a brunch, as a side with dinner, or to top with your favorite protein for lunch.

I use butter lettuce (aka boston or bibb), because it’s tender and mild so it goes perfectly with the sweetness of the fruit. To save time, you can buy pre-chopped bagged butter lettuce at the store. However, whole heads of lettuce washed and chopped fresh are always best.

TIP: be sure to always dry your salad greens very well so that the delicious salad dressing sticks!

Lettuce and fruit (yes, avocado is a fruit!)

For the mango I go with the champagne variety (aka at ataulfo mango), which are those little yellow ones you see in the store. If you need another time saver here, you can get pre-sliced mango at Trader Joe’s, Whole Foods, etc.

The dressing comes together in less than five minutes. In this recipe I use a little minced shallot, dijon to bind and add some tang, honey for a little sweetener, lemon zest to give it some zing, fresh lemon, lime, and orange juices, and just one tablespoon of avocado oil. So it’s very low oil! And of course the poppies.

The dressing can even be made in bulk to enjoy throughout the week. Just store in a jar in the fridge.

If you want to vary the salad ingredients, below are a few ideas to mix it up or sub wherever and however you’d like.

Other salad greens to use in place of or mixed with butter lettuce:

  • arugula
  • romaine
  • baby kale
  • baby spinach
  • radicchio
  • watercress

Other fruit to use in place of mango:

  • oranges
  • strawberries
  • blueberries
  • raspberries
  • coconut

Other nuts to use in place of almonds:

  • walnuts
  • pistachios
  • cashews
  • hazelnuts
  • pecans

Other seeds to use:

  • sub chia for the poppyseeds in dressing (but dressing will be thick!)
  • add sunflower, hemp or pumpkin seeds to salad

Other citrus to use:

  • grapefruit
  • blood orange

Other oils to use:

  • olive oil
  • almond oil
  • walnut oil

This is a great springtime salad recipe to make that has endless variations. And, as a bonus, it is packed with nutrients!

Mangoes contain vitamin C (important for immunity), as well an antioxidant known to improve eye health. Avocados have heart-healthy monounsaturated fats, and have more potassium than a banana!

And last but not least, even poppyseeds have beneficial nutrients. These little seeds contain B vitamins and minerals such as copper, zinc, iron, magnesium and potassium.

  1. in a large bowl combine all salad ingredients
  2. in a small bowl whisk dressing ingredients, then season to taste with salt & pepper; alternatively, you can purée dressing (shallot through oil, then stir in poppyseeds)
  3. toss salad with desired amount of dressing and serve right away
