Everything Breakfast Tacos

Whatever the question, whatever the dilemma, the answer is always the same: TACOS!

What’s for dinner? Tacos!  What day is it? Taco Tuesday, of course.

And now when you are wondering what to have for breakfast, the answer can be these Everything Breakfast Tacos.

Let’s start at base camp: the tortilla.

For this recipe I went with grain-free Siete cassava & chia tortillas, but if you want something more simple you can go with their plain cassava or almond flour tortillas. Or if traditional corn or flour tortillas are more your (breakfast) jam then go with those!

I like to toast my tortillas over an open flame on my gas range for a few seconds per side. Go with medium heat if you do this and use tongs.

Now, on to the eggs. I prefer to buy organic eggs and I like Pete and Gerry’s or Vital Farms. I scramble mine here, but you can do fried or poached if preferred.

Here are my most eggs-cellent tips for the perfect scrambled eggs: 

  • use super fresh eggs, like just laid if at all possible
  • add a tablespoon of water to your eggs to increase the fluffy factor, but that’s it! Anything else and anything more just waters down the egg taste
  • whisk, whisk ’em real good… again, for the fluff factor
  • use the right size pan, you don’t want it too small or too large, be Goldilocks about it (I use an 8” for up to 4 eggs)
  • cook the eggs on low heat, or medium-low at highest, otherwise they will turn rubbery
  • take the eggs off the heat a minute before you think you should, they will keep cooking from residual heat and overcook easily (scrambled eggs should not be browned, like at all!)
  • season with salt & pepper! Some people say season at the end, but I add s&p just before cooking, then finish with a little pink salt to serve

As for the other toppings, I add Kite Hill vegan almond ricotta to make it creamy, which is kind of like queso fresco. Then I top with my homemade Put it on Everything Seasoning.  Cilantro and Cholula hot sauce are optional, just depends on your mood and preference.

I keep mine simple, but topping options are endless!

Here are a few ideas for your taco toppers:

  • salsa
  • hot sauce
  • pico de gallo (see my recipe here!)
  • tomatillo salsa
  • shiitake “bacon”
  • chopped tomato
  • chopped scallion
  • sliced jalapeño
  • microgreens
  • sautéed potatoes
  • sautéed mushrooms
  • sautéed baby kale or spinach

 

Top your taco with salsa or hot sauce to make it a little caliente

  1. in a small bowl whisk eggs with one tablespoon of filtered water, season to taste with salt & pepper
  2. in a medium nonstick skillet, cook eggs over low heat (or med-low at most) until just set, 5 minutes or less
  3. toast tortillas over an open gas range flame on medium heat, about 20-30 seconds per side (or warm according to package directions)
  4. to assemble, top tortillas with scrambled eggs, avocado, everything seasoning, almond ricotta “queso” and cilantro, and enjoy right away
