Chilled Noodles with Spicy Ginger Sauce

These Chilled Noodles with Spicy Ginger Sauce aren’t your average noodle. They are spicy, fresh, and packed with tons of umami flavor. Great served hot or cold, this may be your new favorite noodle.

For these Chilled Noodles with Spicy Ginger Sauce, I drew inspiration from several Asian cuisines. The addition of fresh herbs from Thai and Vietnamese cuisines, the chile sauce from Korean cuisine, and chilled noodles from Japanese cuisine. And spicy from all of the above.

This recipe makes a great picnic dish since it can be enjoyed cold

For the noodles… 

This a quick and easy recipe to make and you can vary it to your liking. You will need just a handful of ingredients.

  • whole grain noodle of choice
  • scallion
  • carrot
  • jalapeño
  • avocado
  • fresh cilantro
  • sesame seeds

For the noodles you can use whole wheat spaghetti, rice noodles, udon, soba, you name it. Just pick one you like and roll with it.

For making julienne carrots hand-grating fresh is best, as opposed to buying pre-shredded. I use the julienne component on a mandolin, but you can also use a julienne peeler.

If you want the dish less spicy remove the jalapeño seeds (or omit the jalapeño altogether). But rock on with seeds and all if you can stand the heat!

Jalapeño gives these noodles extra heat

For your avocado, we are going for ripe but firm,. i.e. not “guacamole” ripe. Add the avocado just before serving so it does not brown, and/or squeeze with a little lime to prevent oxidation.

Fresh cilantro is a must in my opinion, but you can omit if you are not a fan. And for the sesame seeds, lightly toast first for max “nutty” flavor.

How do you toast sesame seeds? 

The best way to toast sesame seeds is to “dry toast” them in a dry large sauté pan over medium heat for a few minutes (no oil needed!). Shake the pan a few times during toasting, and keep an eye on these little seeds so they don’t burn.

Use this spicy chile sauce in other Asian dishes

Gettin’ saucy… 

The base of this sauce is fresh ginger, a spicy Asian chile sauce, and a few other ingredients.

I made this spicy sauce using one of my favorite vegan/gf Asian condiments ~  Mama O’s kimchi paste.  This sauce is great in many Asian dishes and is traditionally used in Korean food.

You can sub Asian chili garlic paste if you cannot find the kimchi paste. Just not the sweet chili sauce, that would make these noodles too sweet.

I used coconut aminos instead of soy, which is a great sub if you are soy averse. Lastly, you will need a little honey (or agave) and some water to thin it out.

To make the sauce you simply whisk all of these ingredients and you have a tasty sauce for noodles, rice, stir-fry, you name it!

If you like a noodle with more sauce, you can double this recipe.

Tossing it all together…

Once you have your noodles cooked and raw veg prepped, just toss with desired amount of the sauce and it’s ready to go. You can serve warm, room temp or chilled. My vote is chilled, so good!

Instructions
  1. make sauce: in a small bowl, whisk sauce ingredients and chill in the refrigerator until ready to use
  2. cook noodles according to package directions, drain but do not rinse
  3. prep vegetables, then gently toss with noodles and desired amount of sauce (you can double sauce recipe if you like a lot of sauce)
  4. serve noodles at room temp or chill in the refrigerator for 2-3 hours for cold noodles
