  1. heat a large sauté pan over medium-high heat, when hot add oil
  2. sauté brussels sprouts until just tender and a little crispy, about 3-5 minutes, add garlic and cook another 1-2 minutes
  3. add quinoa, cumin and lemon zest to brussels and cook about a minute, then season with pink salt and fresh cracked black pepper, remove from heat and cool about 5-10 minutes
  4. to serve, gently fold in chopped avocado, a squeeze of fresh lemon, then top with parsley and sunflower seeds
