in a blender or food processor puree all ingredients, thinning with about 1/3 cup of water; use less water if a thicker dressing is desired (such as for a dip), use more water for a thinner consistency (such as for drizzling over salads)
season dressing to taste with salt & pepper, then store in an airtight jar for up to one week in the refrigerator
