Spicy Asian Noodles
Buckwheat soba noodles with sautéed broccolini, kale, mushrooms, scallion, garlic and sesame, with a sweet & spicy Asian chili sauce

  1. make sauce: in a small bowl whisk all sauce ingredients
  2. cook noodles: in a large pot of boiling generously salted water cook soba noodles until tender but not mushy, about 5 minutes; drain and rinse under cold water
  3. cook vegetables: heat a large sauté pan over medium-high heat, when hot add oil
  4. sauté broccolini florets for 4-5 minutes; add mushrooms, scallion and garlic and cook about 3 minutes (add a small splash of water to pan or reduce heat to medium if vegetables start to get too browned or if pan dries out)
  5. fold shredded kale into vegetables and cook until just wilted, about 1-2 minutes; season vegetables with a little salt & pepper and remove from heat
  6. to serve, add noodles to pan along with desired amount of sauce, sprinkle with sesame seeds and toss, serve noodles warm
