  1. heat a large sauté pan over medium-low heat, when hot add olive oil
  2. sweat shallot and garlic with a large pinch of salt until softened, but do not brown
  3. increase heat to medium, add mushrooms and oregano and sauté about 5 minutes
  4. add tomatoes and a large sprig of fresh basil to mushrooms and simmer on medium-low heat for 25 to 30 minutes stirring often; remove basil, season to taste with salt & pepper
  5. meanwhile, bring a large pot of generously salted water to a boil and cook pasta according to package directions, drain but do not rinse
  6. to serve, mix pasta with desired amount of sauce and top with freshly grated parmesan
