Salted Date Caramels
Medjool dates, almond butter, dark chocolate and flakey sea salt

Instructions
  1. soak dates in warm water for 10 minutes to soften, drain
  2. add dates, almond butter and maple syrup to a small food processor and pulse until a well-blended “caramel”, scraping down bowl as needed
  3. melt chocolate in the microwave in 30-second increments until melted, about one minute total (alternatively melt in a double boiler)
  4. form caramel into round “turtle” shapes and, using two forks, dip in melted chocolate
  5. place caramels on a parchment or wax paper lined plate and put in freezer to set for 10 minutes, adding flake salt halfway through freezing (you want to let the chocolate cool a little bit before adding flake salt, otherwise it will melt)
  6. serve and store Salted Date Caramels at room temp

Recipe makes 4 caramels and can be doubled to yield more
